The Tenets
Marcus spent four years as sous chef at Addison before opening Harbor & Bone in 2019. He still writes every menu by hand. He's in the kitchen six nights a week.
Every Tuesday the menu gets rewritten around what showed up at the market. That means regulars never get bored, and the kitchen never coasts.
Reservations fill up, but the bar stays first-come. Ten seats, full menu, same wine list. Show up at 6 and you'll probably find a spot.
